Suitable/Best Yeast for Scotch (Malt) Whisky

Given recent comments on other threads, I thought I'd take the opportunity to ask here what people's experiences are regarding using specific yeasts for (eventual) Scotch Whisky. I am particularly interested in yeasts tried/used in allgrain or similar grain-based fermentations.

So far 'generic' yeasts mentioned include Lowans (Red) Bakers and various Turbos and 'specialist' yeasts mentioned include DistilaMaxMW (?) and also ale yeast Safale US-05; and (maybe) Nottingham.

All experiences, esp including recipes, welcome.

i haven't tried it, but edinburugh ale would be good for scotch.

A couple of years ago, Fermentis released Safspirit
Safspirit is a selection of 4 different strains selected by Fermentis & packaged in 500g sachets to meet the requirements of micro distilleries.

Safspirit Malt: For the production of Scotch type whisky
Safspirit Fruit: For the production of fruit based spirits
Safspirit Grain: For the production of neutral alcohols
Safspirit American Whiskey: For the production of whiskey & bourbons.

The Safspirit range will be sold to micro distillers by selected Fermentis distributors

Among which to date
Weyermann Malz® for Sales in Germany
P.A.B Srl for Sales in Italy
Crosby & Baker for sales in the USA.
Humlegårdens Ekolager for sales in Sweden.
Bintani for sales in Australia & New Zealand.

I bought some through Ross at Craftbrewer cost over $100....- can't recall which atm- but have had good results.

Hang in there Frank,

Doing a bit of work with a mate for the lallemand dedicated yeasts. I've ordered 2kg of the DS for self plus a few invites to test it but on reading the MW would be a cracker for you.

I'm very keen for this DistilaMax MW, as mentioned in the other thread. 5Star is trying to source some of this depending on interest shown, but it may be unavailable.

I can probably get the fermentis ones if the distributor has stock. It'll be well under the hundred dollar mark.

There is;

Safspirit Fruit
Safspirit American Whiskey
Safspirit Grain
Safspirit Malt

Big cheers to those that are onto this far further down the line than I :oops:
and those (posting above and posting previously and others) whom also aspire to make a fine Scotch. ;-)

Having done some websurf type stuff re whisky/yeast/distiller forums, it seems to me that Safspirit Malt might be the way to go for now (esp if there's enough of 'us' to get it cheaper re Punkins bulk order). So...I'm in too :handgestures-thumbupleft: and may I ask here.... can you guys please consider asap (re ordering deadlines vs bulk discounts etc)??? Love to hear more re the outcomes too....(not for the first time I reckon a Scotch single malt subforum/group/? would be a goer but....)

Oh and (somewhere else) I might just ask about peated grains bulk buy....power in numbers etc

Wouldn't mind trying that DistilaMaxMW myself ~ meantime I'll try an order some Safspirit Malt when the site allows me to PM an order.

dont know if its availible to you but I have just ordered a vial of white labs liquid yeast..
Edinburgh Scottish Ale Yeast - WLP028
The white labs website recommends it for scotch/bourbon.
