Fresh Yeast

Postby Urrazeb » Fri Aug 10, 2012 9:12 am

In a winery I used to cook at we used fresh yeast in our baking, anyone tried using it in any washes?

We used to get it in big soft 500g blocks

I remember the bread and pizza bases were kick ass!

If it was bakers yeast, would it have been like the Lowans yeast that a lot of people use here?

Nah I got that lowans too, it was a soft block, compressed fresh yeast by memory.

We used to break it up, weigh and pitch.

I'm gonna find some in perth and give it a crack anyway.

I'll post progress

Did you ever get anywhere with this? I know my coworker buys fresh yeast at an Italian grocery in Northbridge. Try not to get stabbed.

Woolies used to sell that stuff in the delicatessen a few years ago. Dunno if any supermarkets still do or not. Could be worth asking round a few delis.
