Allied Mills high activity yeast

Postby NotBenStiller » Mon Sep 03, 2012 11:47 am

I got some 500g packs of this dried yeast a while ago for about $3.50 each from Cash and Carry (known as Campbells Wholesale over east)
It's been turning out OK. I've done a couple 100L plain ol sugar washes and both seemed to stall at 1000 and 1005
I've put another one on with a slightly different recipe to see if that helps (the first ones might have gotten too acidic)
I still got 20L of good end product from the 1005 wash - it's most neutral batch i've made so far.
Yet a couple 25L sugar washes, some wheatgerm washes and an experimental smooshed up banana wash have all gone under 1000 with this yeast.

So all in all i'm pretty happy with this bakers yeast - so if you can get to a Cash and Carry it works out even cheaper than Lowans
I started out wanting to make neutral - but now i'm finding it interesting to try out different flavours - so next up is to try some rum with this yeast.

well, a recent ferment of plain ol sugar wash had no citric acid added and it fermented to 990 with no trouble at all - and just with ambient room temps of 15-20, no extra heating.

Pretty good actually - not really a banana flavour as such - just fruity - really good with soda water
It went cloudy when i diluted back to 40% - but no biggie.
got about 4 and a bit L of 40% from the 25L wash (4kg sugar)
Forgot to try some at 60% on oak so i whacked 1L at 40% on some small dominoes to experiment - took it to a bbq and everyone chugged it down - so, more is oaking now :handgestures-thumbupleft:

I buy my sugar from cash converters and a while ago I saw this yeast there and pick some up. I haven't done a wash with it yet but by the sounds of things it's pretty good. When I run it I will post up my results, thanks for posting your experience.

Yeah the bulk sugar is the same price. I just pick it up at cash and carry so I can get 50 or 60kgs at a time.
