Hello all,

Well the Lager yeasts are about done very happy with the last few gens working their magic in just a couple of weeks.

Got hold of 500gm of EC1118 from WineQuip SA for<$30 bonus...a few details here for those looking to avoid heating and bread yeasts.

It's another Saccharomyces cerevisiae bayanus
High alcohol tolerance up to 18%
Short lag phase
Fast fermentation rate in a wide pH range
ferments in the 10 - 30c range optimal 15c - 25c

EC1118 really is a top general purpose yeast, amd a that price you cant go wrong. :handgestures-thumbupleft:

+1 on this yeast but I recommend you always rehydrate and add warm water and a little sugar or honey and let it get going for at least an hour before pitching.

I had two dud batches of this in a row from Brewmaker here in SA. Bill tends to store his yeast pretty poorly but even still you would think that after rehydration it would fire off but no, dead as a door nail.

EC1118 I never used before the plums last autumn and I was stoked with it's performance in the cooler months, I'd heard it was a slow fermenter however seen this to be a bit of misinformation, I could hear the plum pits rattling around the fermenting drums :))

It's a cracker for fruit. I wouldn't use anything else.

Hello all,

put a cooked corn/malt/caramalt/DME plus 8kg sugar, 60lt fermenter wash down on the weekend using EC1118.

Really happy, room temp 15c wash @ 18c and fair belting along without any heating.

Nice soln. for mid season change.
