safspirit american whiskey yeast

well i thought i would give this yeast a bash because normal bakers yeast was taking forever to get down to 1.00 on my bourbon washes
anyways with a starting sg of 1060(topped up with a bit sugar) after only 2 days its already sitting at 1008 or there abouts and still going :scared-eek:
she is nice and warm tho, sitting at 35 deg
i only pitched 100g in a yeast starter to about 160 lt of wash on the grains
would have to say I'm very happy with the results thus far :D
looks like i will be running it in a few days and will post results :handgestures-thumbupleft:

I'm running my AG bourbon on this at the moment.

Just checked it 36 hours in, and that mash is bubbling hard! There's no way I could seal and airlock it :D

Only problem is due to the hot weather it's pumping at 33 deg. I normally run a bit lower, and the recommended temp is 20-32deg C, so I think it'll still be right :think:

Just a word of warning even with all the hot weather I found the whiskey yeasts can be slow finishers...the first 90% happens quick but for whatever reason the last 10% can take as long as the first 90%. Cheers

well she's down to 1.000 now and still working away pretty hard
still got a huge cap on it

mine go to the 975 mark quite often, I wonder whether the yeast getting caught in the trub is why it slows down so much... these yeasts are mostly related to older ale yeasts, and settle to a fairly solid cake at the end of the ferment. The reward is that the older ale yeast varieties tend to really bring out the fruity grain flavours. I have experimented with Nottingham and found it very similar to my malt yeast...either way you will be rewarded for your patience. Cheers.

I have been experimenting with this yeast for my AG and my Sour Mash and have found it excellent! Compared to the tried and true EC1118, it seems to ferment better with a lower FG. The biggest difference is the flavour. I have 2 batches of MacWhisky on wood and the American Whiskey Yeast batch definitely has a more caramel flavour. For my other bourbons, you can actually taste a more fruity grain style of which I like.

While it is exe, I believe the extra expense is worth it :handgestures-thumbupleft:

I've been using the safsprit malt with excellent results, but found it not easily available in stores. However both the hbs I go to said they could get it in for me and lots of places sell it online. Also usually comes in 500g blocks.

Sometimes you find out of date ones for about half. Worked fine for me, even after keeping it open much longer than the one week they say. :handgestures-thumbupleft:

There was a place selling smaller packs they made up themselves form the bigger ones (discussed somewhere on here) but can't find it just now. :-B

I should think it would be fine, maybe don't go all out with the sugar and watch the temp. :-B
But I only ever used it on Ag washes with lowish sg's, also used the malt version.

I was lucky with mine, the manufacturer extended the expiry dates by 6 or 12 months, and worked out about $30 a pack, so I got one of each (Am Whisky, Malt, Fruit, Grain) all for $120!

The thing you've got to remember is you're not using big spoonfuls like you would with baker's yeast. One 5gram teaspoon is enough for a 30-60L wash :handgestures-thumbupleft: I use starters too, so with a simple stir plate, you can get half a teaspoon ready for hundreds of litres of wash ;-) Even at that full price, without a starter, you're looking at 88cents per wash (teaspoon).
