Dedicated whiskey/bourbon yeast

Tried lowans yeast for a while and it works well. Looking for something new. A bit exotic if you like.

Looking for higher yields and great flavor.

Suggestions?

Safspirit malt yeast is what I have been using, works well.

I don't push the yield too much as it always ends up with worse spirit :handgestures-thumbdown:

8% wash ABV is what I aim for, it's an easy target with yummy results :handgestures-thumbupleft:

I use the Safspirit American Whiskey yeast and think it is great. You can get 100gm packs to try it out but yes, it's exe.

It does last a long time so it works out fairly economical :handgestures-thumbupleft:

You don't need much for each batch ;-)

You can also reuse your yeast and wash it, simply put a 500 gram bag could last for years ;-)

When you think about haw many washes you can get from one pitch the initial cost thins out pretty fast :handgestures-thumbupleft:

I only got 1.5kg of EC1118 because I ain't doin gens with it 8-} :handgestures-thumbupleft:

how do you find 1.5 kg of EC1118? I pay a buck a packet at least two packs to a 50 litre ferment.

You can buy 500g packs for about $35 here... There was a group buy not long ago, we got them for $27 (I think) each.

All whiskey yeasts evolved from brewing and baking yeast, most distilling yeasts have developed the characteristic obloid sperical shape of cell... the ancestry of old ale yeasts is still evident...while I use fermentis malt yeast myself... I have used many old ale yeasts such as Nottingham to great success and they will yield the fruity big flavours which one associates with fine whiskey. The development of terpenes and esters in the beer is very evident in the washes done with ale yeast. I like what ale yeasts does to peated malts, it is a viable alternative to specialist whiskey yeasts.

Any chance you could elaborate on the process for this. I decided to give one of the White Labs yeast bottlles a go (on special at the HBS, going out of date by the end of January). I really like the bottles, feels sciencey like my Erlenmeyer flask :smile:

That being said, keeping it going would be pretty nice. I'm assuming that I can mix up some of the dunder yeast at the bottom of the fermenter with some watered down wash and throw it into the fridge. What's this washing that you refer to?

Another alternative is to make up a starter for it, and then before pitching separate a little of the starter into a clean tube container. This is possibly what I'm thinking of doing in addition, be running two versions kinda.

The things you learn. Seems as if just rinsing with cooled, preboiled water is the go and decanting twice into containers that go into the fridge.
Might try this and then subsequently scrape out the caked yeast and put them into some more science-y looking test tubes with a little liquid on top.
