Tomato Paste Wash (New to Brewing)

Hey guys,
I have recently upgraded my air still to the Turbo 500 and am looking around for a wash that presents with a cleaner flavour. (HBS yeast is crap)

I have read up on here about the TPW, as I believe this produces a cleaner spirit?

Just wondering how long the fermentation time is? (Roughly)
What % the alcohol comes out at?
Do you still discard the first 50-100ml of spirit produced?
Is there anyway that this wash can be harmful?

all this and more will be answered in the New to distilling section of the forum

Fermentation times will depend on : temp both wash and ambient, specific gravity, pitch rates, wash size, nutrient levels etc
alcohol will ferment out to an alcohol % determined by the amount of sugar added (sg) and to the threshold of the yeast ( don't push your yeast)
the % alcohol you make from your still will also vary pending the way it is operated.
Fore shots must always be discarded, and heads and tails also removed,, -- read up on making cuts
sugar washes generally produce fewer nasty's than ag but all are safe if cut correctly, an will give you bad hangovers if not.

I have done 4 or 5 TPWs using EC1118 yeast and found that they take between 3 and 4 weeks and sometimes get stuck using the standard recipe. I have since taken to adding DAP to the recipe. I ferment 200 litres at a time so use a little maths to figure it out for your fermenters.
For 200 litres
50 Kg sugar
62.5g EC1118 (1/2 a 125g pack)
1.5 Kg Tomato Paste
25g Citric acid
200g DAP (100g initially and another 100g after 7 days).

Mix the yeast in about 2 litres of water at 30C and a couple of desertspoons of sugar. EC1118 is expensive so this method allows for growth of the yeast.
Dissolve sugar in water. I use a 20 litre pot and do 3 batches with 16 or 17 Kg in each. Divide the citric acid for the number of batches you do.
Dissolve the tomato paste in enough water to get a nice runny consistency and ad to the fermenter.
Half fill your fermenter with cold water and add the syrup and tomato paste.
Top up with enough hot/cold water to get the whole fermenter at 30C. It'll be around 1.07 SG
I use rainwater, so don't have to worry about chlorine. If you do a search on this site and you'll find how to deal with that.
Aerate the mix. I use a 1/2 horsepower air pump with a diffuser ring.
Add the yeast, close up the fermenter. Each day monitor the SG, after 7 days add the 2nd lot of DAP that's been dissolved in water and cooled to whatever the fermenter temperature is at. Mix it in.
It should finish in 3 weeks, and then leave to settle for a week. If you strip too soon you can get a strong yeasty flavour coming through.
I hope this helps. I'm sure there'll be plenty of other methods, this works for me.

When distilling I prefer 4 fast stripping runs to get enough for a 50 litre spirit run that's been diluted to 45% for the run.
Foreshots and heads I use my tastebuds and nose. I often take out around 1.5 litres of these and use it for starting my wood stove or as an insecticide. I don't want any hint of acetone in my vodka. It's so cheap for what you get you can afford to be picky.
