The ethanol tolerance of yeasts is strongly dependent on the composition of the medium in which it is evaluated. It is now admitted that the maximal concentration of ethanol that is characteristic of different alcoholic fermentations (for the production of beer, wine, or sake or for large-scale production of ethanol) is more dependent on medium composition than on the intrinsic ethanol tolerance of the industrial strains.

I use calcium sulphate (gypsum) as rec in the making pure corn whiskey book page 49-50 ,check the library section cheers hillzabilly

A calcium content (50-250 ppm) is beneficial to the subsequent fermentation and the resulting flavour of the finished whiskey,as i use ro water 2tsp per 20 lt.Thats one of the reasons some distilleries were set up were they are ,access ta water suitable for fermenting with no iron content.cheers hillzabilly
