Thermostat to control?

Hey guys,
Just running ideas through my mind while I decide what to build.
I have a Digitrace thermostat controller here and was wondering if anyone uses these to control the heat for spirit runs?
Not too sure if it would be as effective as limiting the power, but thought I would ask.

It is controlled by a temperature dial and has a range of -4 to 163 degrees C.

you cant control temp of the wash. Alcohol % determines boiling temp, it will increase in temp as alcohol % decreases

A controller needs to control output/power.

the cycling of the thermostat will turn power on and off ( full power to off, not vary its power output )
unless the unit can run continuously with viable output, it wont be a good controller
