This is a HBS brandy recipe that my wife has me make for her. I have tried quite a few and this seems to do the trick.

1800ml of 60% neutral in a 5 lt glass demijohn with 150gms of Extra Toast French Oak chips for 1 month.

At the end of the month oaking add 6 x bottles of Prestige Brandy essence and top up to 4.2 lt with distilled water, filter and bottle. The longer it sits in the bottle the better it seems to get.

My neutral comes from a normal TPW which I strip, usually three lots of 25lt, and then a spirit run from which I get a neutral at about 94% ABV.
