Mandarin Liqueur / Rumtoff

Having the man flu today I stayed inside and peeled the rind off 2 kgms of Mandarins today and soaked the rind in 1 litre 45% abv neutral spirit. See picture below. Ideally I should have used .. say 92% abv... though you use what you have available.
Now what to do with the left over fruit? After looking around the forum I have decided to do a Mandarin Rumtopf.
A little unusual though I have heaps of Rum..

Here is the result...
Raspberry and Mandirin Rumtoff
See pic below.

It's a 2 to 1 mix.

100gms fruit
50 gms sugar
Cover with Rum
Continue the process until the container is full.

First taste just before Christmas....
Great for desert toppings.

I note that the sugar washed down a little, next time I will start with fruit and not sugar.
