It would work . For an all grain brandy This calculator will get you ballpark figure. For amount of fruit to water for deired gravity. Mash it break up fruit remove seeds and add pectanaise let sit two days or so. Then add yeast. Pectanaise will help make more sugar but also create more methanol. Double your fores cut.
You will end up with a thick pulp slop. Squeeze liquid out anyway you can then still. Or steam strip in a pot still thumper..

Something easier make a sugar water base to desired gravity would recomend 1.065 gravity and add fruit to taste. More fruit more taste... once fefmented strain and run :handgestures-thumbupleft:

Would it be best to freeze the fruit first? That way the cells burst and you should get more flavour and more sugar.

Would help also boiling will break it up.. some say..freezing along with boiling changes flavour. You may prefer using these techniques or not. Also pectainiase is not used by everyone. But i reakon you want to get as much as possible from the fruit.. :handgestures-thumbupleft:

Oops forgot link to calculator in above post

Yeah you do actually it has the best smell and plenty of watermelon taste. I just juiced them in a cold press then strained then topped up with water and sugar.
Will definitely be doin again when aldi has them for 99 cents a kilo.
Looks suss though leaving with a trolly of watermelon and sugar and bread yeast :wtf: :wtf:
