Blue Berries? (Looking for ideas!)

Ok. So I work on a blueberry farm and have access to a lot of seconds (soft, over ripe, and damaged fruit). I was wondering if anyone had a recipe that could make use of these little blue bits of joy.

I'm really new to brewing and aside from adding fruit to a standard sort of mash I'm pretty much lost.

Fill ya fermenter blitz to get more in. Add pectainaise follow packet directions or dont up to you, using it will make more sugar but also more methanol.. With any 100% fruit mash double fores cut. Add a good wine yest will be sluggish ferment. Not sure how you would go stripping sludge in airstill :think: most use a steam still or direct fire and very gently heated.. after double fores cut do cuts as usual age on french oak enjoy :handgestures-thumbupleft:

Cheers! Seems like too good chance to pass up! :D yeah, air still isnt the greatest tool for anything, but its the tool i've got for the minute!

I would strain squeeze pulp only put liquid in still. Pulp in an airstill i think will be asking for trouble :handgestures-thumbdown:

That makes sense! Yeah cleaning gunk out of the gland end on it would be a nightmare!

My other idea was to do a wash, and after stripping to let some berries soak in it before doing a spirit run. (frozen first so they'd be nice and soft when they thaw.) then straining them out before doing the spirit run.

Could try making a Blue Berries wine and then fortify with neutral.

They mAke a hell of a mead, add ing after the ferment for a week. Make a nice sweet addition to your thumper charge, too. :D

Blueberries are very low in sugar, better used like a himbeergeist. Look for heidelbeer schnaps.
