If its anything, the cap on mine didn't really sink.
If you got a plated column, I don't think you will have any trouble running it now its stoped bubbling, but a pot still might get some unwanted carryover from a wash thats not at least a little bit clear, or from running too fast.

I found the cap sank with in 48 hrs of the wash fermenting out, seems to be about the same with all fruit washes

Ran my first lot this evening. I ended up buying a hydrometer and tested my first barrel, approx .990.

Wow. This tasted and smelt lovely.

I got 8.8L off the pot still with around 45L in the boiler running it to 20%. At least 200ml went to the distiller. The flavours and smells were lovely through almost all of the run.

I can't wait to get this ready for the a spirit run.

You guys are going to like this stuff , even the early tails are hard to discard. I've been told a few times that the best brandy comes from plums and I think I would really have to go along with that

It's nice stuff, but its a bit harsh straight off the still. It tastes good at the time, it gets better fairly quick and keeps getting better.
I got some I made 2 years back, its very nice now, just not much left

I know how you feel about the no still thing mac. Its tough.

How did your ferments go Mac? Mine all taste very nice :handgestures-thumbupleft: how's the difference between the batches with and without sugar.

Ferments went great, did 2 runs of 40ish litres and then the still gremlin came around and took it, I'll have to let you know the difference in batches once my 6" FSD Mac 4 shows up :D

Could plums that had been frozen be used to make plum brandy?

Yep. You won't get the wild yeast but I think a wine yeast like EC1118 is better. Lots of the yanks on the HD forum swear by freezing all fruits first to rupture the cells and release more sugar.

Hey guys,

I've just run a batch of fermented plums + sugar, getting a strong smell of tea coming through in the tails. I've never smelled tea before, but then again I've never done plums prior to this either. Is the tea smell something anyone else has had before?? :wtf:

Well I'm currently stripping another lot of my plum brandy. I think I'm down to around 120L of wash remaining.

I put quite a bit of large chunks of fruit into the boiler and experienced that it was coming out cloudy (puking?) for the first 1/2 of the run. Around about 45L went into the boiler, the same as I have done with liquid only. This was not experienced on those runs. However, the smell and taste throughout the run so far is amazing. I tried easing up on the heat and still had a cloudy output.

I now have close to 100L of low wines. I can't wait till I get time to do a couple spirit runs on this stuff. I am really looking forward to the final product. After tasting Macs brandy, I am really thinking that to do this justice a bubbler needs to be built (sounds like a good excuse).

look bud 2 runs with the pot on this stuff and I'm confident you will be more than satisfied. A cloudy strip is not to much to worry about if it happened on a spirit run I would suggest you slowed the fuck down :handgestures-thumbupleft:
