Kiwifruit recipes?

Postby tokboy » Sat Aug 13, 2016 2:20 pm

Does anyone have a recipe for kiwifruit? Had a look around the site and couldn't find anything? Its pretty cheap here now and I wouldn't mind giving it a go.

Not done it myself, but this may be a starting point for you:

Kiwi Liqueur Recipe

3 cups Vodka
6 ripe kiwis

2 cups sugar
2 cups water

Peel and chop kiwis into small pieces – at least 8 chunks per fruit. Place into one large clean Mason jar, or divide among 2 medium sized jars. Cover with vodka, cap the jar(s) tightly.Give the jar(s) a quick shake once a day or so for 2 weeks.

At the two week point, taste for doneness. If your infusion lacks flavor even after steeping for a couple of weeks, just add a bit more kiwi, and continue infusing until it’s just right!

Once desired flavor strength is achieved:

Strain spirit through a fine mesh strainer, discard the fruit, and make simple syrup.

Combine sugar and water in a saucepan. Heat to boiling, stirring until sugar is dissolved. Remove from heat and cool before using.

Stir about 1 1/2 cups of the syrup into the strained liqueur. Once fully combined, taste. Adjust ingredients for desired sweetness – I like doing a 1:1 ratio of syrup to infused vodka. Once you are happy with the sweetness, carefully pour your liqueur into a clean bottle.

After bottling, you should let it age for about a week in the fridge before drinking it – IF you have that kind of patience! Aging results in a smoother, more mellow flavor.

Good luck

Are you looking to ferment it or, has Woodsy answered your question?

I've got a feijoa tree/bush/shrub.
Don't get alot of fruit from it, but then i dont really give it any love to encourage it to fruit and the kids tend to end up pulling the fruit off before it has a chance to develop.

If you know how to do cuttings you are welcome come a try.
But it will take a while for them to ready and fruit as i understand it.

I believe you need to have a few of them, and cover them up if you have hard frost.

I made is close to the Feijoa recipe. Took about 10 days to ferment. I scooped out the bulk of the fruit that was on top. Let it settle for a couple of days and ran it through some cheese cloth. Let it settle for a couple more days and it cleared up nicely.
Took a bit off and will rack it and bottle it for a wine. It tasted quite nice at this stage.
Ran it through the pot still and ended up with 4l at 55%. It was still running but I was over it and stopped it early. It has a fruity smell to it with a slightly bitter after taste. There wasn't really any kiwifruit taste to speak off. I will put it on some chips for a while and see what happens.
