So your carter head can be used for a vodka too. They really are a very versatile piece of kit.

I am guessing that along with the addition of the t section, the thump tube was extended lower?

yes the thump tube extends from the Tee to the bottom

Maybe a dumb question but is the copper tube just a straight vapour discharge into the thump section or is there a screen or diffuser to soften or disperse the vapour more evenly through the liquid?

cant talk for other but mine is a straight tube with diffuser slots much like a over sized bubble cap

I have slightly serrated ( shallow slots) the end of my pipe to encourage the formation of higher volume, smaller bubbles .
