K type sensors having very low thermal inertia allows quick readings & take control of heater.

No shortage of people out there using them for exactly what you are proposing.
I'm using a Control 6410 NIST traceable precision digital thermometer:
FEATURES:
Displays minimum/maximum temperatures for last 24 hours (for each hour) and last 7-days (for each day); or last 31 days (for each day)
Range –100.00 to 199.99°C, resolution 0.01°, accuracy ±0.1°C; fulfills precise requirements for refrigerators/freezers
Ideal for ultra-low freezer applications
Alarm is settable in 0.1° increments and signals when temperature rises above/falls below set points
Permits easy one-key calibration by user
Traceable®: To assure accuracy an individually serial-numbered Traceable® Certificate is provided from our ISO/IEC 17025:2005 (1750.01) calibration laboratory accredited by A2LA. It indicates traceability to standards provided by NIST (National Institute of Standards and Technology).
SPECIFICATIONS:
Range: –100.00 to 199.99°C (-148 to 199.99°F)
Resolution: 0.01°
Accuracy: ±0.1°C

Very nice setup, however bit more than I really need, now my option use 2 digital multimeters with K sensor input & cheap K sensor display from china $7USD
would be nice to have 3 displays built in my heater control box :)

I think you can get the two prong plugs from jaycar mate. :handgestures-thumbupleft:
