Hi Les
Very ingenious way to put botanicals in the vapour path. I am planning to use fine drawstring bags (like large tea bags) in the column.
Have ordered some butterfly pea flowers. Do they add any flavour or just colour?

Hi Carol. The pea flowers don’t seem to add much in the way of flavour. Only colour really as they are only in the gin for a short period of time. Tell me more about the draw string bags.

These were the ones I bought. They are very fine so the botanicals should stay put. I also use them for straining. You can buy DIY tea bags at Daiso as well. I have not tried them yet but the theory is that the cross bar on the column will stop them from falling into the boiler. I might add a little mesh circle just to make sure. I hope the link works if not Mr. Google will help you find them.

Mine arrived yesterday morning, so made up my first bottle last night. Colour was pretty good this morning..

Les - how much did you add to yours? Your colour looks alot deeper than mine in the pic - maybe I'll be surprised tonight when I get home.....

DA, I use about 30 flowers to the litre and soak them for an hour. The gin is then strained through a coffee filter into bottles. Don’t think there is a right or wrong answer to your question. I reckon as it’s only colour, there is a fair amount of scope to alter quantities. I did a bit of research as to how they are used in herbal tea and used that as a baseline.

Had a sample of this batch the other night. Wish I had some lime or lemon handy to enhance the colour change. The glasses were not the best but I just wanted to try the flavour. It was yummy.

Hi bluc,

It doesn’t seem to. I should get some dissolved in water to do a test and see how much flavour it imparts. All I know is that the gin tastes good. Heading off for a week or so. Will let you know when I get back.

Just did a test on the flavour impact of the butterfly pea flower. Added some dry flowers to both hot and cold water and let them steep until the desired colour change occurred. Allowed the water to reach room temperature and looked for any obvious differences in smell and taste compared to filtered water. Both coloured samples had a slight aroma that reminded me of dry grass or hay. I doubt if you would detect it in a gin. There was also a very subtle taste present that was similar to what I was smelling. I also got my wife to taste all samples. She just shrugged her shoulders and said that there was very little difference in the infused samples compared to the water sample. The ink gin that I have made showed no evidence of the smell or flavour that I detected in the test samples.

Just been sampling a modified Odin’s gin thatI put down about a month ago. It’s my best drop to date. Started with Odin’s technique by:

Adding the following to 1l of 43% neutral:
12g juniper berries lightly crushed using a mortar and pestle
3G coriander seed lightly crushed
80% of one small Valencia orange peel (peel carefully removed with a potato peeler to ensure minimal white pith)
20% of the peel of one mandarin (peeled as above)
Allow to macerate for 24 hours and remove citrus peel before distilling.
Dilute to 40% ready to distill.

Pace the following in an open weave cotton cloth bag to secure in the column of the pot still:

1 lightly crushed cardamon pod
2 lavender flowers
1 or two crushed black peppercorns
1.2g Angelica root.

Distill slowly. Discard the first 10-15ml. (Don’t multiply this amount if making larger batches. The amount remains constant up to 5l of the product in the boiler)
Keep the next 400ml of gin from the still.
Collect a further 4x 30ml containers and allow to air over night.

Container 4 should be tails and taste really skanky. This will usually be discarded. Container 3 may or may not be the same. Use your own discretion here. Containers 1 and 2 will be earthy and a little peppery. Blend in any or none of it depending on you own preferences.

My pot still has the gin finishing up at about 77% abv. Dilute to 45% and allow it to sit for about 5 weeks.

I usually make 5l batches so all quantities are multiplied by 5. The only thing that DOESN’T change is the amount of foreshots that I remove.

Just running a small batch of gin at the moment with a few botanicals added to the vapour path. The little 5l boiler is a cracker for this job. (Actually hold 6.5l to the max. fill mark.) Got the power controller at 80v to give a nice, slow take off.

And another batch of ink gin is being created. Never get sick of seeing the colour leach out of the flowers.

Ended up with 5 1/2 bottles of gin @ 45%. A couple have already been snaffled by the family.

Thanks Tesla. Unfortunately the printer chucked a wobbly and wouldn’t do its thing. The date came through which is all I really wanted. Had a sample late last night. Very nice indeed. Should be quite drinkable in about a month or so.
