Needed a break from the computer today after yesterdays failures trying to configure forum settings :cry: so today was spent out in my shed building a new still :D

Got the shotgun product condenser done and the plates filed to size, and built a parrot... looked out the window and it was dark :shock:

I love a day like this when everything falls together nicely, time passes quick, and the job is turning out perfect :mrgreen:

Couldnt be happier after a big day in the shed and working up a good thirst.

Spent the weekend running my VM with a 40L charge at 40%

I was busy Thursday / Friday nights so didn't have time to set up, so planned getting up early - but slept in

After a few hiccups with the cooling lines with my new 1000L cube water tank I was finally at boiling by 8.40am

Started bleeding foreshots at 10am collecting about 500ml at a few drops per second

Switched to heads and collected about 500ml / hour up until 4pm (about 3 litres) - I wasn't sure about where the cut would be but ended up with ~2.3L as heads (I aired it overnight and sampled)

Then was into hearts - opened the valve right up and was collecting at 1.2L / hour - per 5Star's specs

By midnight I'd had enough so shut the system down

Sunday morning started up again - closed for 1/2 an hour and open again - collected probably another 2 litres before the temp when up - closed the valve a couple of times to slow it down and lower the temp. After it went up again I opened it up for faints collection - and collect another 2.5 litres before calling it quits

All in all a good weekend - yielding ~ 11-12L of hearts and ~5L of faints

Ran 25L of stripped Birdwatchers through the T500......learned a bit more about cuts.....tried tasting on a teaspoon mixed with a little water straight from the still as Ive noticed some people do. Think I found were the tails cut in and much easier than waiting 2 days and relying on smell. Trying to learn how this works so that I have some idea when I do my first spirit run with the pot still. Ill still do the smell test in a couple of days and see what I learn from it. Finished the arvo off cutting up oak staves on the band saw ready to toast for when my first batch of UJSM is ready.

I spent this arvo diluting and bottling some of my oldest rum, and some spiced rum that turned out pretty nice, about 55 bottles all up :D

Then I started looking at the bubbler bits I've had sitting for a few days and finished soldering up the plate tree.

Good productive arvo and now I got room to do some more oaking of rum and some white dog UJSM.

Stripped 40 litres of 2 gen UJSM wash last night.......got more strip than my first effort. Tasted parts of the run as it was happening and think I can pick up a corny grainy taste now. The hot backset is definatley smelling very corny :dance: Cant wait to get to 5th - 6th gen and do my first spirit run

You will be happy with the results of a multi gen ssm wash, it only gets better. I stripped a bastardized version last weekend, and will have to strip another this weekend. It's a typical ujssm, but 20+ gen, over a year old and instead of the corn it started with, it's now mutated to a barley/barley malt adjunct as well as occasional corn.

I feed the ssm every 2nd or 3rd wash with some dap and some epsom salts, and it's right lively after I do so. I add some grains every 6th wash or so, and this method seems to work.

How does this relate to this thread?????????????

Well of course, I had to go downstairs to the brew room and cut some 95% ujssm reflux to drinkin 40% strength.

Later this weekend, there's yet another batch to strip, 40l of low wines to run, and an ageing carboy to top up...

Decided to dilute and bottle around 6 litres of uncle jessies corn whiskey thats been oaked on a mix of toasted/charred american and french oak sticks in 5 litre demis for around 5 months. I've still got 1 demi left with around 3 litres of likker and 1 toasted oak stick that i'm going to try and leave for a few more months at the back of the cupboard to see if the flavours improve some more.

Was 65% initially and was around 61% today.

Ended up with around 13 x 750ml bottles @ 42% ABV.

Now I just have to put most of em away and forget em and I'll have a lot of chrissy pressies and drinkies sorted.

And no fellas the pics are in the kitchen not the shed. The wife was out getting some beauty therapy so I was doing some moonshine therapy! 8-)
