Live dunder in rum wash.

Anyone done or do this, I did a forum search and can't find anything on the matter.

I have do it before and turned out okay, not sure if it's safe.

What's everyone's thoughts.

Happy new year mate!
I have played around with this last summer, but it dropped the ph of the wash pretty quick (a lot quicker then normal) by the second day. Had to ad calcium carbonate to finish the wash.

I how boil dunder and use about 12% of total wash, then once fermentation is about a day off being done I ad another 12-15% live dunder and let it sit a few more days before running it.
Also when pot stilling rum I always ad live dunder to low wines and let sit for a week or so. Just my 2 bob

Dunder and time on oak is the key ;-)

Thanks Blinky sounds like you have got the recipe down pretty good.

Because I'm stubborn and don't have any great way to boil dunder in large volume I might try the live dunder one more time and keep an eye on the ph, I didn't check it last time but didn't see much change in volume out of my last wash.

Keep dunder from your last run for the first addition and add the live dunder approximately one day before the end of the fermentation.
This way ensures that the yeast do most of the work before bacterial interference and crashing pH isn't an issue.

As for safe providing you have the right bacteria in the live dunder then yes. Bacteria die in high abv alcohol and also don't survive the boiling process... The only possible harm could be from a bacteria that produces a toxin that survives boiling and high abv alcohol and gets carried over the distillation path... So far I've not heard of anyone suffering anything untoward.

That said be careful with the live dunder clean everything used including you. pre-distilation some of the bacteria could be harmful

I guess I will look around for a 10l pot to boil dunder as I'm rarely ready to put down another wash straight after a run.
