Jack Daniels Distillery

Had the pleasure of doing a tour yesterday of the JD distillery in Lynchburg Tennessee.
Interestingly, every drop of Jack Daniels comes out of this distillery worldwide.
They said that they take the wash or mash and pump it into the top of the distilling column and as it goes down with gravity over several plates, they inject steam from the bottom of the column and extract, 140 proof distillate. The mash itself isn’t directly heated in this process. the mash is already hot from the fermentation, but no further heating. It’s an interesting approach. Has anyone tried that on DIY level? Unfortunately was not able to take photos from within the distilling area due to “explosion risk”, or so they say.
They claim the key to making a Tennessee whiskey is in the mellowing process, which is just filtration through charcoal. Any other process is not a true Tennessee whiskey.
I jokingly asked them when my statue would be erected due to loyalty over the years. There was nothing special available in the tasting well not anything that you can’t buy off the shelf already would’ve been nice to have some exclusive access to some top end single barrel.
