No problem fishleg.
It's a really simple gin with a low botanical count but it's an absolute cracker. It's basically "Odin's Easy Gin" as it is known in other parts of the world but I added orris root as a fixative.
3 litres neutral @ 43% ABV ( I used neutral from a recent bran wash)
36g Juniper berries
9g Coriander seed
Zest from a lemon
Zest from a lime
Zest from a mandarin
1/2 tsp orris root
I macerated all the ingredients for 12 hours.
Then I gently and slowly distilled the macerated liquor (including all of the botanicals) in a pot still on a double boiler with a power controller.
I discarded first 10ml as per the original instructions, and collected the next 1200ml which came out at 81%
This was proofed down to 45% and I took a 200ml sample to drink today and have the remainder resting to allow the flavours to fully meld.
It's a little citrus heavy (probably due to me leaving the zest in the pot during the distillation) so I will probably increase the quantity of juniper next time to give it a bit more presence.
Dead simple!
