Our hens have been laying so many eggs we ended up with a huge over supply, so I'm trying a few different recipes of pickled eggs.

One of the recipes I've found was a pommy pub version that's very nice

Mrs mac is going to do some in three different jars and make traffic lights

Christ I like pickled eggs, Went on a bucks night once when living in Taree , It was a bus trip pub crawl ended up in Harrington and the bus pulled up at a pub near Harrington turn off ( can't remember the name of the village now ) but they had p/eggs sitting on the top shelf behind the bar , so I pigged out on 'em , jeeez they went down good with the copious amount of beer , and you can guess the rest :puke-huge: :puke-huge: , fuken crook for the next coupla days :laughing-rolling: :laughing-rolling: :laughing-rolling:

Cheers

Having a wee sample of the first and second runs of UJSM that I put through the bubbler. Already there seems to be quite a difference in tastes. The first batch was 50/50 UJSM wash and UJSM strippings. Divided this lot into two equal amounts, one with charred sticks of A/oak, the other with heavily toasted sticks of A/oak. its been on oak for about seven days. The second run was done using 40L of UJSM wash only, and has only been on oak for 3 days.....it seems to have more flavour by far at this stage. If this is an indication of things to come there wont be much stripping getting done around here.
