Ideally you want a voltage controller. With out the control, you can't "properly" run/control a pot still. Too fast, smears all your cuts, too slow, not enough flavour comes through...however your asking about stripping runs = hard and fast, so you might be good to go.
But in saying that, I run gas, so the sparky users might have more to tell.
