Homemade Rum essence flavouring.

Thought I'd put this here for any discussion as it worked so well for me. Also posted in the molasses thread.
Try this.
100ml hot dunder from a molasses wash (make whatever quantity you like by scaling up).
100ml good neutral or hearts cut from the wash.
Put dunder into a glass bottle, preferably tall and slim, and wait until cool. Add the neutral and place into the fridge to settle. Let sit for a week or two. Longer the better.
Carefully syphon the essence off the solids that have settled out.
Add to 1 liter of hearts or neutral however you want to get light to dark rum. 5 - 10 ml for light (will be very light brown), 20 - 30 for medium (golden) or 50 - 60 for dark rum. My mum loves it.
Allow bottle to settle, as it will go cloudy, and either syphon or carefully filter the solids out of the bottle. Not my recipe but can't remember where I got it.
If you don't want to make a huge batch of rum for a little dunder just ferment out a miniscule wash and then boil in a pot to get the dunder.
The smell of the rum this essence makes is amaaaaaazing! I just had to keep going back for a sniff.

Made some of this last night after reading the post as I am just starting out with making my own rum so will not have any ready for awhile yet.

It's definitely got a fantastic smell to it. Not at all what you'd expect using dunder. Sort of sweet and chocolaty. I should have said you'll still need to oak the hearts/neutral, if that's what you like, as the essence can't impart that flavour to the rum.

Im making this at the moment from a all molasses wash, got the idea from Buccaneer Bobs silver, gold and black rum. :handgestures-thumbupleft:

Developing a rum essence using toasted oak chips in 60% and fermented molasses. It’s fucken great at the moment and hoping to get better. All my mates think it is the best rum they have tasted but they have only drank stuff from Dan Murphys!

The rum essence in the original post uses some of the molasses wash leftover after distilling, so I’d say it does :teasing-neener:
