For me the first step to fine spirits ,will allways be fine fermentations (no still produce's fine gear from shabby wash) well cleared out,run through a quality still with good consistent management,donot forget our ancestors made plenty of quality gear without ever hitting AZeo.My opinion is no it does not have to be AZeo to be good ,let your nose and palate have the final say,and realize that some of us like me have spent 10 plus years getting to a point that we are happy with ,as your experience grows so will the quality and consistency of spirit.Great expectations can lead to dissapointment and quitting when you donot realize them .cheers hillzabilly ;-)
