My own house strain of yeast

Now I use Lowans bakers yeast for everything regarding spirit fermentation. I'm wondering if as I have been told the yeast mutate to their environment can I take a good scoop of grain which contains a good portion of yeast from my ujsm fermenter, wash it to remove grains and start another ujsm or cfw with a yeast the has mutated to be more alcohol tolerant therefore creating my own " house strain ".

It will certainly work to start a new gen weather or not its better i dont know. I always find gen 3 to produce more low wine than any other.(i do 5 gens per grain bed) This time round i am gunna try and be efficient grab as much data as i can see if i can work out why...

I know it sounds bad but the first 3 gens of ujssm I run as neutral as i find I get the best flavour after gen 3. After gen 3 I collect everything in my spare keg for the eventual spit run.

Do you sour mash from bacteria or backset? Apparently lacto drives aciddy through the roof. I used to always think lacto was a vinegar infection that ate all the alcohol but apparently not. And is a welcome addidition by most when sour mashing, and the main reason for open top or wood fermenters..

You really ditch first 3 gens? How many gens you do on a grain bed?

I sourmash by backset, I turn the first gen to neutral every time, it makes a nice neutral has a sweet aftertaste. Then the 2nd and 3rd it kind of depends on how strong the taste is. If I think its not as strong as I like I neutralize it. I know it is a different technique compared to common practice but it works for me.
On a grain bed I normally go 12 or more gens, replacing about a third of the bed every 2nd gen.
Never had a lacto Infection, in the brewery or otherwise.

Seems like you turn over a lot of grain and could be a never ending mash. What % backset you use? I do 5 gens no grain replacement and 10% backest..

I did try 25% backset at first but I found after gen 4 or 5 it slowed down significantly, like 2 weeks for a turnround during summer. I now do 8 litres of backset per 45 litre ferment.
I do go through a bit of grain but at $15 for 25 kg I don't mind.

With most of these questions I always wonder "What have you got to loose?". I've had a crack at it and was only halfway successful. I think it was probably Moore 'me' than anything else, mainly because I wanted to do everything NOW and not wait to perfect one thing... early days.

There's plenty of YouTube vids that helped me a lot. I did it with Lowans bread yeast and when I reused it, it was slower to get going than the dry, unused yeast. I think, I will have another go at it, but more with speciality yeasts, not lowans.

I did try not adding any backset on every 4th gen when I was doing 25% backset but I found it easier to do a bit less for longer and to be honest most of the time my ferments are 50 litres or a bit better as most of the time my kids distract me while I fill them :laughing-rolling:

I will be doing a strip run this week so I will give it a go. I use to do yeast washing during my beer brewing days, so probably be a couple of extra rinses to remove the grain and any extra unwanted schmutz.

I'll try recording it Ezi but to be honest when it comes to that sort of thing, I'm about as handy as a glass hammer in a carpenter's tool belt.

Yes, 2 but I can just imagine the video I would get if I handed my phone to my 6 year old. " Here mate, record this please " I would get 25 minutes of him chasing the dogs followed by 3 minutes of him terrorising his younger brother. With me in the background cursing at him. Lol.
