I did 8kgs in total, 60% medium, 40% heavy. The result being a wonderfully peaty if not a little bitey (i think we included some late heads) spirit in October. It has since settled down and is quite smooth and the peate smoke has reduced a little, but still the most predominant flavour. We are going to have to be very strong willed to let this age long enough though. It is good enough to drink! lol

I have to take a leaf out of your book Bluc, and do a heap of mashes within short time. That way we can get to some serious ageing with small quantities of oak per litre. (no barrels yet)

I need more Hydors! with 5, 6, 7 or 8 FVs between 2 houses we're gonna have to keep shifting the single one we have back&forth! ~x( Best travelled hydro in history... ;-)



PS: not all FVs are on the go at the same time! Unfortunately... but we're getting better and better at making AGs so it'll be just a matter of time before we will need more.... :dance:

Wondering about yeasts. I used safspirit malt, and it is really fruity(very early days I know) does this fruityness fade or is there a yeast that doesnt produce such a fruitty whiskey?
I know nothing about whiskey but cant remember whiskey/scotch tasting like fruit.. I always thought it just all tasted a like bourbon/whiskey/ un peated scotch.. :think:

Interesting question. I don’t recall many Whiskies with a fruity smell but I always thought that Oakland NF would quite those notes...

We ran an AG that used a Bavarian yeast, the sort smelled strongly of Bananas and I was looking forward to the end product, but the Banana has subsided massively! Very disappointed...

Speyside whisky from Scotland have many fruit notes.

I only kept smidge over 2l @65% from last lot so even though it was highest sg and best effeciency it finished a bit high @ 1.012 so it wasnt my best yield. Was the highest abv though which is good. Will definately look at a finishing yeast. All grain is lots fun and look forward to lots more to come.. :D

Had hoped to run them last weekend, but apparently there were more pressing things that needs my attention! :?

Won’t have time this weekend, praying hard to get a chance next weekend! But apparently there some major event in that weekends as well so I may be plum outa luck!! :angry-banghead:

Perhaps I can do something in the break!?!? :pray:

Have 2 to run, last FV has Rye meal in it!
