62% from a single run interesting..From strip then spirit run after cuts i normally get 75% before watering back..

Low or high Bluc? I wonder if the difference would be the thumper?

Yeah, I think we might have run it way too hard and smeared the crap out of it. Only time will tell. Next time, I will try running it at a broken stream I think. We were just a tad excited I think. :laughing-rolling:

Thinking back, I think our stream was definitely thicker than a pencil lead. We filled our jars too much too. Next time I think we will only half fill the 400ml jars. make them easier to pour too. Wasted way too much in the pouring :angry-banghead: . Need to make some kind of a wine thief I think. :think:

If your going to try to single run with your thumper you'll have to slow it down like you are doing a spirit run, so yeah dripping to a broken stream max output I'd say. This will bring up your % as well as clean up your flavour. I found I got slightly higher % when I put faints in the thumper as well.

It'll take a couple of runs to sort her out but you'll get there and she'll produce some nice drink for ya :handgestures-thumbupleft:

Thanks Woodduck. I was worried we had taken it too fast. Might add what we kept from gen 1 to the boil for gen 2 and run her low and slow with half feints, half wash in the thumper. Want as much flavour to come across as we can. Might even order some extra heavy peated malt and add to the wort as an adjunct. Any thoughts on that?

Sounds like something you need to test :)


Only problem with whisky is you need to be patient. Make a batch or 2 every week for a year and you'll know everything you need to about it.

So with whiskys do you mix a couple of runs and age together in a corny like we are doing with the NGW or age them in individual jars with say a bit of oak covering the mouth. My mates mum has just come up with these

But I don't like the idea of the lids. Plenty of volume by the look of them though.

Hi Stillers,

Just thought I would give you an update on Nessie. We ran gen 2 of NGW taking on board all of the great advice given in this thread and other threads.

So it was a 23 L wash and only siphoned about 20 out of the fermenter. Added nearly 3l of feints to the boiler and about 3l of wash to the thumper. Got her up to temp and ran her low and slow. With our new addition, the ugly duckling parrot, we kept the product coming off to a toothpick size stream and the difference in abv was resounding.

Fores @ 84% not adjusted for temp. About 200ml

1. 200ml. 84%. 81°c
2. 200ml. 83%. 82°c
3. 200ml. 82.5%. 82°c
4. 200ml. 82.5%. 82°c
5. 400ml. 80.5%. 83°c
6. 400ml. 78.5%. 83°c
7. 400ml. 76%. 85°c
8. 400ml. 69.5%. 88°c
9. 400ml. 60%. 91°c
10. 400ml. 45%. 95°c

Rest we ran hard and fast into feints jar down to 20%

Had a couple of little tastes along the way and gen 2 definitely has more flavour. Looking forward to adding it to gen 1 and sitting it on some oak for a while.

Gen three is underway and in addition to some dress nutrigrain, (removed about 1 liter of old cereal) we added a kilo of spent peated grain from our mash last weekend with about 4-5l of backset. . Grain smelled great even after being frozen and thawed.

Will see how it goes.

More like what i would expect as far as abv. what do you reakon your collection rate was? Looks like a good run :handgestures-thumbupleft: only thing with 20l wash i would prob do 150ml cuts..

The run took about 2.5 hours and we took nearly 4 litres so 1.6l/h. That was at a toothpick. We had to up the heat toward the end to keep that up though, full blast to get it down to 20%.

I have wondered if we are making our cuts too big, if for no other reason, the jars are a bit hard to pour when they are fuller. Spilled some of that precious nectar!

I was amazed at how long the abv stayed high, then equally surprised at how quickly it dropped.

If you had say 40l 40% low wines 300ml cuts would be fine. But when you are only expecting 2ish litres end product then cuts should be as small as possible. 100ml heads will stuff 200mls hearts so your down 300ml end product. Where is you did a 150ml cut that 100mm heads will be picked up in a single 150mm cut jar. Doesnt always work out that neat sometimes the 100ml heads will stradle two jars, but for most part this idea of small cuts works well :handgestures-thumbupleft:

Ok, so 48 hours after our second run and amazed how much difference the slower pace has made. Only jars 1, 9 and 10 went into the feints jar, so about 2.2l of product. Added to Gen 1 and the mixture was at 70%. Watered down to 65 and a wee sample had. Very happy with the result. Tastes young, but not harsh. Thank you guys for the advice and guidance, but don't for one minute think I am finished with you yet!

Hey Bluc.

Sorry for the radio silence. Life has gotten in the way for a while. For one, after a two year wait, I received an Assistance Dog which has allowed me to get out and about a bit more, and 2, I have been helping a lot more with my wife’s business.

Nessie is still chugging along nicely when we find time to run a wash. Have done a couple of CFWs which are way better than expected, and hope to do another all grain mash after the Christmas craziness has passed us bye.

How are things in storm beaten qld ?
