I never clamp the lid on my fermentegg, I usually just rest it on the hole to keep the bugs out.
Just sit the lid on top and stick your ear up against the side of the fermenter - you'll hear the yeasties working if it's still fermenting. Check the SG every couple of days when it starts to get quiet and if it's the same on two consecutive reads it's done.
Cheers,
Prof. Green.

how long do you take to run it after its done, im more worried about infection once its done fermenting if i dont have the time to run 200ltr of wash in time
Plumby wrote:I do 200 litre ferments all the time, both rum and ujssm.
I've never had an infection and I usually do a strip run every weekend then a spirit run when my low wines keg is full.
I run a 50 litre keg boiler and 2 inch pot still.

Run a wash a couple of months after it finished fermenting with no issues.
