Recipes
650g raw corned beef, cut into thin strips

1/4 cup soy sauce

2 tablespoons Worcestershire sauce

2 tablespoons brown sugar

1 teaspoon ground black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

2 teaspoon smoked paprika

Marinated overnight..

Second lot
650g raw corned meat
1/2 cup tomato sauce
2tbl sponns worchestishire sauce
1 Tsp pepper
Marinated overnight.

Dehydrator

Why would you start with corned beef? I've never heard of that before. I use either top side or skirt Depending on the style I feel like.

Ive done it that way before and it works. no where near as nice as fresh topside or rump.

Corned beef is for boiling, B. And it also contains nitrites and a shitload of salt. Let us know how it goes, but fresh skirt steak is my choice. Cut across the grain for a crispy jerky, cut with the grain for the softer type.

Hope it turns out ok for you mate, might be a tad salty though.
I get uncorned silverside from my butcher, it’s a tad cheaper than topside and works just as well :handgestures-thumbupleft:

Corned beef is pre salted and cheap is why i used it. I reakon it needs plenty salt. Had some last night and is pretty good not ott salted. :handgestures-thumbupleft:
Was pretty cut by time I had it but...will try more later today :laughing-rolling:
Next lot will try a unsalted cut and see

+1 on the use of corned beef. Per kilo, jerk is the most bloody expensive snack. Why not make it yourself and use a cheaper cut?
You're right it will never be as good as a super low fat topside, but what it's worth is still good.

I also have mates who shoot alot and I've done alot of roo and also venison (damn good).

If you need extra salt, try using a malt vinegar in the marinate.

Oh and on another note, I was a little bit of a chilli fan when I was into my jerky. Grew alot of my own, superhots, butch t scorpions, little reds, nagas and bells.

A little hint, unless you want to burn your undies with farts, having a painful churning stomach and lava poop, try and avoid Naga chilli's. Great burn, smokey taste, but deadly in a jerky.

I make heaps of jerky out of roo and venison and use a pretty similar recipe.

Another favourite with the kids is bacon jerky. Just get the cheapest bulk pack of bacon and lightly sprinkle with pepper, garlic powder and brown sugar. Then just tear it up into smaller pieces and chuck it in the dehydrator. Don’t trim the fat off, that’s the best bit. It’s already cured so don’t add any salt.

I’ve been using corned beef.
I know it’s salted, but I rinse it off and let it sit in cold water for half an hour as I find that settles the salt down quite a lot!
We don’t have a ‘local butcher’ so make do with what we get... seems that gets forgotten at times. :teasing-neener:

It’s a pity the camel trains can only bring salt beef & barrels of water in. I thought most of the country was pretty civilised these days :laughing-rolling:

And lava poop was what happened after he lit the fores, wasn’t it?? :laughing-rolling:
