Blue Berries? (Looking for ideas!)

Postby Radkal » Fri Nov 08, 2019 7:52 pm

Ok. So I work on a blueberry farm and have access to a lot of seconds (soft, over ripe, and damaged fruit). I was wondering if anyone had a recipe that could make use of these little blue bits of joy.

I'm really new to brewing and aside from adding fruit to a standard sort of mash I'm pretty much lost.

:text-thankyoublue: In advance!

Fill ya fermenter blitz to get more in. Add pectainaise follow packet directions or dont up to you, using it will make more sugar but also more methanol.. With any 100% fruit mash double fores cut. Add a good wine yest will be sluggish ferment. Not sure how you would go stripping sludge in airstill :think: most use a steam still or direct fire and very gently heated.. after double fores cut do cuts as usual age on french oak enjoy :handgestures-thumbupleft:

I would strain squeeze pulp only put liquid in still. Pulp in an airstill i think will be asking for trouble :handgestures-thumbdown:

That makes sense! Yeah cleaning gunk out of the gland end on it would be a nightmare!

My other idea was to do a wash, and after stripping to let some berries soak in it before doing a spirit run. (frozen first so they'd be nice and soft when they thaw.) then straining them out before doing the spirit run.

Don’t try dehydrating them, they turn into chewy little sugar pills :angry-banghead:
Oh wait 8-}

Could try making a Blue Berries wine and then fortify with neutral.

Blueberries are very low in sugar, better used like a himbeergeist. Look for heidelbeer schnaps.

This is indeeed what I was about to answer...
Himbeergeist = raspberry spirit or eau-de-vie. Berries like blueberries, raspberries or mulberries have a too low sugar content to be processed like other fruit brandies.
The raspberries are expediently ground or mashed and then soaked in undiluted spirit (90-95%), with 0.5l – 0.7l of spirit being taken into account per kg of berries.
They will stay for one or two weeks, then be distilled in a pot still. As blueberries have got less flavour than raspberries, I would take 0.5l/kg.

Completely agree, just doing 30kg of mulberries and expect low output and little flavour.
