Would be heaps more exciting if someone gave some figures on yields and not just how long its taking to ferment.....

It's too late for me to make measurements, but I'd say that I got over 70%. And that was probably due to me not stirring enough and not grinding my corn small enough. So there an answer of sorts.

Or you can just do it yourself and find out.....

Hey sam going by this

Teddysad wrote:Latest trial underway.

Fortunately I have a chinese speaking home stay so used him to translate some of the chinese instructions. We perceived a reference to heating/cooking the grains.

Put together 2 corn mashes

1st was standard method for the yeast: 5kg crushed corn, water at room temp, 45g yeast and 1/2 tsp DAP.

For the other I heated water to 88C, added 5kg crushed corn, held it at temp for an hour (stirring several times) then added it all into fermenter to cool.

Next morning at room temp, added the 45g yeast and DAP.

Both sitting at about 27 litres total volume .

and then this

Teddysad wrote: update on Angel experiment:

The two corn ones also have been stripped. Not as high a result as the rice. In each case about 17 l of mash racked, stripped to about 15% gave about 3.7 l of low wines at 37%
No great difference in volume between cooked and uncooked corn.

Not sure exactly how much water is needed to get 27l volume from 5kg corn. But from my own experience, from memory, absorbtion is about 1l/kg. So guessing you need 23l water to get 5kg corn up to 27l volume. 17l is 100% wort reclaimed.

So now according to brewers friend and this forums water to distillate calculator we are at 91% effeciency. Approx.

Yup, asked for this on page 3....

Ordered some last month from www.5stardistilling.com.au, but it went off the shipping radar on the 23rd of May, so I doubt I'll be getting it!

Starting batch #2. It's bourbon, 4 ferments that'll be stripped and then a spirit run. 3 of corn, one of oats. One of the corn ferments might get some barley if I can find any. The first is 50lbs of rolled oats, not milled, and 25 gallons of water. I poured 15 gallons of boiling water on the grains to kill as much bacteria as possible, topped up with cool water to 30 gallons after an hour since it soaked up nearly all the water! In the morning I'll pitch a half cup of Angel on it if it's cool enough.

I've never worked with oats before, way too thick to get clean sample to test for SG. In fact, they like to swell and float so much that they blew the lid off my 50 gallon fermenter and overflowed onto the ground! Happy yeast :))

I only lost a couple cups, everything is going great so far. I've been stirring every couple hours. I got sidetracked today, the corn is getting boiling water tomorrow afternoon and hopefully pitching yeast before I go to bed.

I was able to buy some caramel 80l malt online. I'll be using 25lbs in this recipe and 25 in the next to get a heavy caramel flavor. I love caramel!

Today the mash isn't going as crazy, still stirring every couple hours.

Finally running my corn mash thru 4 plates as we speak.
Never really got rid of that strong sour smell and it didnt really clear up that great either, but here goes.
Smells nice off the still. One thing i did notice is how sweet tasting the wash was once fermented, had me thinking it wasnt done despite no activity. The gravity read .997 so in she goes.
Off the still it has that same sweet smell to it that i could taste... interesting

Nice! Post up as to how it turned out!

Yesterday I poured 20 gallons of boiling water on 50lbs of cracked corn run through my mill to get it smaller, hoping to sterilize it and prevent a bacterial bloom. This morning I added 8 gallons of cool water and pitched yeast. The oats are still fermenting fine.

Plan on going through my cuts tonight.
Got around the 3 ltrs roughly from 40ltrs of wash... went down to 20% Abv.

What flavours are you hoping to get from the oats beerswimmer?
I've got a bin of oats there so might have a go with some at some stage. Got some malted Rye there too that needs to be used up.

I have no idea really! When we were about to go into lockdown I went to the feed store and bought 8 bags of cracked corn. They didn't have any barley, the first time EVER  , but they had whole rolled oats. I know people have used it, so I bought a bag. It's supposed to give a good, soft earthy grainy flavor and help with the mouthfeel. I guess I'll find out in a week or so.

Yeah i racked it of into 2 seperate storage vessels.
Lost bout 5 ltrs in the sediment and yeast in the bottom. Amazing how much floury corn sludge settled to the bottom.

So i went through my cut jars and it turns out i got 2.85 ltrs @ 87% Abv. That was from 40 ltrs of wash.
Not sure if i did my figures right, but following blucs method the efficiency came up around the 90%.
Either way im stoked with the result and will be doing a few more ferments with this yeast.
Being that i really like to get the most from my ingredients, ive put the spent corn back in the fermenter with some sugar and we'll see what comes of it.
