When I checked the PH, it was low.
So I threw in a bit of bicarb soda and after about 1 hour it was up and running again.
pH is low, under 4.
What did you bring it up to?
Don't know. Didn't check. Was annoyed.
Used about 1 teaspoon and a quick stir just on top.
A few days later fermented to 0.994 - 0.992.
Will be using oyster shells from now on for ALL ferments.
Ordered 1 dozen large oysters for $24 and have to find a way to make them palatable.
Also found a place in OZ that actually sells sterilised oyster shells as course grit.
Only problem is that it's a 20kg bag.
Price is OK at $32.16 + $6.83 postage.
