Keeping fresh yeast

Hi people,

I have some fresh bakers yeast that I use for my washes.

It came in a large block like a pack of butter would.

I have kept it in an old ice cream tub in the frige. However when I opened it this morning there was some bacterial growth on the outside of the packet.

I have removed the packet and have thrown it away, but was thinking about adding some alcohol to keep it in?

What do you think?

what do you mean by adding alcohol? your better off storing it in a vacuum sealed bag and at about 4 deg for longer life. Yeast have a alcohol tolerance usually around 10% some higher some lower, They will die when that point is reached so if you are putting alcohol on the yeast then they will most prob die and if not they will loose alot of viability

Cheers, I haven't got a facility for vacuum packing so will just have to keep it in the ice cream tub.

Vacuum sealers are cheap as on eBay and very handy. I use it for my hops,also when we go camping we seal out meat individually and freeze it all before we go. Keeps the esky cool for days.

You could build up a yeast starter, add some DME, water and yeast, let it ferment out then refrigerate then just take of as you need a few days before you want to use it, warm up add a little add a little more DME to get the yeast working again and pitch.

I have only ever used dried yeast...

I don't know mate but I just went to an ethnic grocers and asked if they had any live yeast. This was what they gave me and it's worked great. It was only £2.00 UK for the block and has lasted me absolutely ages. I will definitely be buying another one.

reckon I would try a sandwich bag,( not a vacuum as such but you can squeeze out most of the air) and bung it in the fridge

Wrap it in glad wrap first then chuck it in a zip lock bag, oxygen is the enemy :banana-ninja: (i felt like a dancing ninja banana)

Yep glad wrap is the shiz, nice and tight and to the back of the fridge :)

Store your yeast in the freezer, it won't hurt it at all.
