Hello all,

posted bout the EC1118 and mac and BB mentioned fruits.

I was lucky enough to get a good hour with Thomas at Winequip and really did cover a vast amount of ground. He's a AG brewer +15years, distiller and Wine yeast specialist.

I had taken my homework over to discuss.

One yeast we discussed was Uvaferm 43 or QV43. Doc/others have mentioned it's stuck ferment ability and was looking at it as a possible option for rums along with EDV46.
The uvaferm 43 has a specific characteristic it breaks down/consumes and is used for high fructose musts...ideal for the plums next season.
It's used to lower specific wine ferments residual sugars other yeasts can't touch.
10gm and 500gm 1kg packs.

btw the EDV 46 is a specific rum yeast. It has two characteristics rum heads might be interested in, but have not tried it myself for about 2 more weeks.
It's resistant to yeast toxins normally found in molasses
Fast start
high alco tolerant

Thanks bt. I am really interested in the EDV46 for my rums. I think I will have a look around and see if I can get ahold of it.

Edit: just noticed it comes in a 10kg block. Might have to rethink that.

EDV46 & I think 43 :think: are ones I tried..... Lowans specialty rum yeast is my go to tho :))

Just doing some searching and EDV 493 keeps popping up in rum yeast discussions. It seems to get quite a good wrap.

Yeah Mac, the beauty of lowans is how easy it ks to access. I am just finding that my yeast cake really struggles from the 3rd gen on and I am not sure if the lowans is fully fermenting out. I am wondering if a speciality yeast might fare better. :think:

493 IS the one I meant by 43, thanks for the memory jog :handgestures-thumbupleft:

It's good sure, as is 46... but! my best rums come from using lowans.... and I'm a rum nut ;-)

I'll check today but most of their yeasts come in 500gm and 1kg packs as well.

I have done 10's of rum washes and I must say that I like the buttery undertones a good bakers yeast tend to impart on the sprit.like said before its all a preference thing if it works for you and your happy thumbs up

Funny,

How perception changes once you actually have used a dedicated quality yeast and taste the difference.

Well worth a try.
