I've read a few threads which look at yeasts, but am not 100% sure for a pot still design.
I've currently got a sugar wash down for cleaning my still using bakers yeast.

If making a simple mash whiskey, is bread yeast ok?
If making a full mash, is bread yeast ok?
If making a rum with molasses, is bread yeast ok?

I see still spirits makes a whiskey yeast, is that what I need?

Hi qldkev,
If making a simple mash whiskey, is bread yeast ok? Yes but a ale yeast might be better. I prefer redstar premium cuvee
If making a full mash, is bread yeast ok? If your investing that much time definitely invest in a better yeast
If making a rum with molasses, is bread yeast ok? Hell yes bakers yeast is propagated on molasses at the factory.

the still spirits range of specialists yeasts are good particulary the rum one but not worth the extra money.


In short the yeast has a major influence on the finished spirit just as it does with beer.

Bakers yeast (Lowans) is pretty good for most things and it's cheap, so it's widely used & popular, however I'm using it less & less these day and switching more to the specialty yeasts like EC1118 for vodka (TPW) and safmalt for UJ & now AG type wash/mash/wort 8-}

Saying all that some of my best booze was made on simple Lowans bakers yeast.

I'm coming from an All Grain beer background, and would never use bread yeast in a beer. I was just not too sure as we are distilling the product.

The Safspirit looks easy, as I often use Safale and Saflager in my beers. Can you only get the Safspirit malt yeast in 500g blocks? I see a lot of people re-use the yeast case (as in the UJSM) but does anyone wash the yeast for re-use? Also, just googling, I noticed there is also a Safspirit American Bourbon, so it looks like another good yeast. I assume these better yeast would still be excellent for an UJSM. I take it you would not use the Red Star Premier Cuvee in an all grain whiskey, just the UJSM styles. Final Q, is there any good online shops for the Safspirit.

I am only talking about distilling here, so my comments (answers) only relate to that ;-)

Yes mate, for rum that is all I use... I did try a specialist rum yeast EDV 43 (iirc) but found no real advantage, it was a 500gm block so It wasnt a one off ferment either ;-)

These guys stock it Distilling yeast
I have ordered brewing gear off them before without any problems. :handgestures-thumbupleft:
