Hi all, Happy new year,
Just started stripping runs on LME wash, 2cans liquid malt =3kg and 3 kgs raw sugar, so sg was 1080 after 16days fg1022
So 7.61 abv, where I’m used to a higher abv wash with wbab etc and I normally collect about 1000-1100 ml @ 30-32%every stripping run in my air still, looks like il be collecting 900ml for 25% abv which is about 3% off the spout. So over a 25 ltr wash il be about a litre down on lowwines, which I have 3 fermenters so il struggle to get enough end product to fill my Spanish oak bad mo barrel :crying-blue:
Do others have similiars lower product outcomes with the liquid malt ?

What food did you provide for the yeast or what yeast did you use ?
I would have thought that LME + sugar would ferment out lower than that

No additives Stig, and I was talked into using a champagne yeast, instead of us05 by local fella here, I had the us05 on counter but he thought the lme & sugar would have a higher abv so recommended the champagne yeast mangrove jacks cl23 .
I still have 2 full fermenters I’m considering throwing some bakers yeast in and see if eats more, would that work do you think?
It was made on 15/12 and last 3 days sg hasn’t changed ,

The only time you would use champagne yeast is when fermenting fruits and it’s going to be super slow .
I would also add something like DAP as a food for the yeast to live on , there’s not enough food in a simple sugar wash.
So yea chuck some bakers yeast in and some DAP, I bet it’ll ferment out better

Ok, so I added another 20 grams bakers yeast a multi vitamin to each fermenter, ph was 3.6 so I added some baking soda till ph rose to 5 gave it a good stir and its now babbling away again so hopefully it will ferment down a lot more,

Rob. I left the LME fermentation go for 4 weeks. But suits my 2 week cycle of running the still. I suspect it would have been earlier than that

Hi Woody,
I ordered another two tins of lme from kegland and 2 packs us05 and some dap, so il leave the two fermenters alone now, they have stopped bubbling so probly wasted my time fluffing about with them, and when lme arrives il fill my other fermenter and hurray up and wait, OR just finish off this lme run and stick on dominoes and do another macrum and throw that in the barrel for a couple years, so many decisions and choices .
