Longest ferment ever!

Hi Peeps,

I have an agave syrup wash that has been fermenting for at least 6 weeks, last I did this wash it was done and dusted in a week, this time every time I think its done it comes alive again. I think it has to do with temp, when I notice its bubbling I heat it a little believing high twenties would be optimal, it comes to rest, I turn heaters off come back and wash is back at the low twenty's and now bubbling again. Last checked SG a couple of weeks ago and it still had a ways to go about 1.020-30, but this is getting ridiculous or is it?
I was going to run it today but go I go down to the shed and bugger me its bubbling away at a burp every 15 secs, tonight its about ever 20 secs. Maybe at long last it is coming to an end but it got me thinking;
What is the longest ferment anyone else has even experienced and how the hell can the same recipes vary in ferment time from one ferment to the other?

50l keg boiler 4" still mount 4" sight glass 1" drain..
4 plate 4" bubbler, 600mm packed section

EC1118 is so slow it’s crazy .
As per Bluc , what yeast ?

started with DADY yeast and it was a slow start but by morning it was chugging along nicely went for a week, and then slowed and stopped or so I though working in the shed a week later I hear blurp I thought I might be able to help it along so added some bakers yeast then it ran another day or two and stopped or so I though then yesterday I find it running at a burp every 15 seconds and this morning I am still getting burp every 30. Putting my ear to the vessel I can heard to little bubbles crackling gently. Ph has not been an issue keeping it around 5, it has been extraordinary though to stop dead and then fire up days later, the only real change has been temperature. I though I'd ask if anyone else has had a similar experience. Will check SG once it stops this current phase, DADY yeast is supposed to be ALL THAT, but I've had mixed results, think I'll just stay with the Lowens.

@Stig what configuration would you recommend to run the Agave, I'll want to hold as much flavour as possible, so would you recommend 3 or 4 plates? I've heard that distillers that run Agave detune their stills and run slow to retain any Agave flavour, so would that equal 3 plates in this instance?

Try 2 plates for max flavour

Or keep 4 and turn off deflag

Or use deflag load plates bleed fores heads then turn off deflag.
