Distree ageing+Vanilla bean

Hello all,

have as one does a few experimental lts haging about striving to improve the process. Pinched the idea form US site btw. One I'm extremely impressed with and would like to share is distress ageing and using vanilla bean.

Basically it's a UJSSM been aired for a week, then timbered with croc style amercian oak for 2 months corrected to 65% abv. I also air it for first few weeks after timbering up.

With 1 lt with single re used timber strip added 1/4 of a vanilla bean cut to expose core then popped it into the freezer ever night for two weeks, removing each morning and leaving it open after repeated shakes morning and often at night to stir it up a tad.

I'd estimate it taste in terms of ageing at about 12 - 14months. Not bad for a drop that's really only 2 months old. It lacks the deeper colour of well true aged spirit but dam the taste is good. The vanilla takes a good two weeks to be detected as an aroma by week 4 it's defintely in the taste profile but well balanced not over the top.

That harsher early hearts 'edge" is also missing ...bonus!

If you have a spare lt or 10 suggest you give it a try...you might be rather surprised how good it gets so quickly.

Did you do a side by side with one treated identical but not in the freezer?


I did when i started.

When you say you are comparing it to 12-14 months aged stuff, have you actually aged stuff for 12-14 months?

For what its worth........and from what Ive read.....faster aging is more likely to happen using motion or controled contact with air.....could be wrong...often am.

Hi all,

side by no issues although the "control" was more like 4 lts but in much wider 5lt Manson jar was done.

I've about 75lt in storage between 12 months and just a tad under two years old.

There's no work it just sits around with the occassion shake up, dust. I've not altered timber but reckon it might be the go once it's over two.

Agree the extra air exposure would help but it it's not the same compared to the 4lts not put in the freezer...this lot still has that sharp edge to me.

Just a quick update...

a week+ down the track and the vanilla hint has come "forward" a little and really a nice touch...

now if only we could get a receipe for Coke Zero....
