Just starting out and need some advise? then post it in here.

Brew too sweet

We are brewing using super 6 yeast with 6kg of water and 25lt water.
We are using an essentia still getting on average 3.5lt at 90%
the last few have been very sweet does anybody have any clues??

We have recently packed the column with Stainless steel.

How can we take the sweetness out of the liquor as there really is too much to throw away.

You could try rerunning it and carbon filtering it.
But, the real problem will probably be from not being fully fermented.
In winter it takes longer to ferment out all the sugar if it will fully ferment.
You could try using a heating pad or something else to keep the fermenter warm during these cold months.

what was the final gravity of the wash before you ran it ?

sweet might indicate it was not finished fermenting

Sounds like you need some copper packing in your vapour path.

Do you have a stainless column and stainless packing?

Hi nanna :lol: geez it's a long time since I've said that, anyway welcome to the forum.

Dont be afraid to elaborate a little when people are trying to help you, a little more info on exactly what your still is would be very helpful for those trying to give you some advise ;)

Ok I did not know that.

I did say at the start that it was an essentia still.

We have replaced the copper packing and are using Stainless and this is the only change we have made.

The brews were all made in summer in Perth and were at 900 before cooking.

There are a few different kinds of essencia still, yours is the better of those types tho.

Did you replace the same amount of packing that came out? it's shoved in those things pretty tight from memory, but if you do put more in you should be abe to breath through the still if it's not too tight.

At first I would have said your wash had not fermented out properly, but with an FG of 900 that's very low so shouldnt be the problem.

Do you carbon filter your product after distilling? this can help remove unwanted flavors.

Have you by any chance added essence to your brew that your talking about?

We filter through the essential filter which has carbon and ceramic filters.
We flavor with different flavors but the actual vodka out of the filter is sweet.

Got me beat.
I do have a question for nanna, are you saying that you made these wash's in summer and just stilling them now?
Or they were distilled a few months ago and youre just tasting them now?

I'm wondering if it might be the sweet pineapple smell I get in some of my heads???? Are you cutting what comes out of the still Nanna??
I wouldn't be throwing anything out just yet.

They were put through the still a few months ago and we are now tasting them.

It does not smell like pineapple and no we do not cut.

When we started it was great but now everything is sweet.

Take the first 100ml put it aside for lighting the fire then take the next 200ml put this aside and then the next 200ml put aside aswell then collect the rest like usual until the temp starts to rise then stop, leave the two lots of 200ml and treat the rest as you normaly do and see if this improves the final product. These are the first steps to doing cuts, or you could just collect it all in stubbies and let it air for a day and then smell the difference between them all.
