Just starting out and need some advise? then post it in here.

Reusing the wash

I have question about the wash / dunder?
Is there a reason that only a fraction of the wash is reused?
After the boil why not put all of the (I think the term is backset) back into the fermenter and recharge it and start again?
Just curious.

Using to much Backset or dunder will make the acidty of the wash wrong for the yeast and there for your wash wont ferment correctly.

The backset still contains sugars / flavours etc left over from the previous so wouldn't a bit of soda ash neutralise the acid and you would keep all the flavours flowing so to speak.
I am thinking of a whiskey that ferments and boils in the same keg.
Take out a yeast starter each time for the next ferment run, top up with grain etc.
Each boil takes out the alcohol and breaks down more starch.
Ferment again and so on and so on.
Does this make sense?
