to toast, or not to toast......?

hi gang :greetings-waveyellow:

after making a home for tiny tim, the small boiler i made, i had some off cuts, as well as the bits i trimmed from the end of the boards which had started to split. yeh... i used american white oak :shifty: . i cut the offcuts ext into 20 x 16mm sticks, and for sticks less than 80mm long, i trimmed some more down to 16 x 16mm so the end grain was less than 10% of the total surface aria.

i was planning on charring some, and toasting some. any reason to leave some sticks as raw?

When you char new oak I find you get lots of "raw oak" also with only couple mm each side charred so wouod just go with charred. Toasted dominoes the toast goes all the way through may maximise caramelised wood sugar but find it gives a different taste to an actual barrel especially with bwko style drinks...rum benifits more from toasted full thickness 9ak imho :handgestures-thumbupleft:

I am looking to do some toasting also, watched a bit of a certain kiwi distiller regarding toasting different temps.

There's also a toasting temp chart somewhere here on the forums.
I highly recommend chasing down that chart and look for the flavours you are after.

so... when you guys toast, do you wrap each piece in foil individually, or several pieces together? i've charred half the sticks, now it's time to toast the rest. :handgestures-thumbupleft:

Wrap it up in small boundless.
I'm fond of toasting but often char after I've toasted.
I don't use just charred.
Essentially you'll need to try it all to know what it is that you like.

did my first test batch. 180c for 1.5 hours. comparison against one of andrews medium toast french oak dominoes:

sadly not. it was awesome for the first half hour, then all i could smell was burnt wood :)) . it *is* very pleasant to work with. nice and sweet when you saw or plane it. when i made my canoe, i used a timber on the outwales called naingon.... smells like flea collar when you cut it :puke-huge: .
