Any suggestions from my perth distillers where I can get my hands on a couple kilos of virgin white American oak? I'm wanting to start to play around with toasting and charring myself but can't for the life of me find a reliable supplier. I've seen a lot of mobs use the oak for smokers, would this be the stuff I'm looking for?

I've read around and saw that you can essentially plane staves that have been used in wine barrels right back to the natural oak again. is this legit? I imagined the flavours of the wine would travel a lot further into the wood..

I have planed the outer layer of staves used by a winery back to remove the old salty crust and wine marks. Next time I will just remove the salty crust section. These work well except are slow to colour the spirit as they were not toasted. I only made one mistake and that was I cut the stave into short square blocks instead of long blocks. I exposed to much end grain so I am watching them closely to make sure they do not over oak the spirit. Next time I will leave the wine layer as that might add a nice flavour profile

As welsy says you can put them in oven to toast or hit them with your propane torch to char or both. To get traditional bold burbon flavour I reakon you need virgin oak. Cooperage should have both used staves and virgin offcuts. :handgestures-thumbupleft:
