Aging in 50L keg long term

Hello

im looking to age my spirits in 50L kegs long term

currently doing uj then will do saltys rum
read through heaps of forums does anyone the correct amount per litre thx

There is no correct quantity as flavour is subjective and depends if using chips, staves, dominos or a combination. Charring or toasting, level of toast or char. The general consensus though would be 7-10grams per litre.

I personally like 7gr per litre using dominos in booze 60-65%abv for minimum of 12months.

In a 50L keg i would go 45L with 315g (approx 22-25 FSD dominos) for minimum 12months.

A lot will also depend on if the chips/staves/dominoes are suspended or simply sitting on the bottom as well as how often the spirit heats and cools over the period. Give it 11 months and then you can start the onerous task of sampling the product to find the point you like it best. It’s a terrible job but someone has to do it. Yell out if you need a hand :laughing-rolling:

Its ive been storing the uj at 65% in glass jars with ptfe seals waiting for enough to fill a keg but its been a mission

thanks for the info , i really didnt want to put so much time in and mess it up

Have you considered a corny keg mate. At 20 litres they are much easier to fill than 50 litres also much easier to move around :)

looking at a few at the moment i just got my hands on 50L kegs first, but im just trying to put the hard yards in now to build stock for the future as it seems thats how the seasoned members on here do it

Maybe even a solera like sbb ,

my uj is currently in 3l jars ptfe wrapped on american med toast dominoes (2 per jar which i think now is too much) with a light char until i can fill the keg, then ill fill the keg and move onto sbb rum for the next keg

running nutrigrain white dog for current drinking stock so maybe that might be the next project

added a swapped the 25l ferms for a 200l and working on a stripping still

I was running out of BWKO so I grabbed 6 litres out of my 30litre keg and replaced it with 6 fresh litres. Just because it is aging does not mean you still don’t have options :)

We worked hard to get a supply it would be silly not to enjoy some of it.

I have 2 but sitting waiting for one to finish fermenting at the moment made me wonder if I needed 3.
I only run for half a year and trying to build up some stock.
