Aussie sour mash whiskey

I kinda hijacked the bundy red process here as another experiment, I made an all grain sour mash and oaked it out, added some pure maple syrup and in the meantime I charred some sawdust in the fish smoker, packed a 4foot column with the charred sawdust and ran the spirit through it, 5 litres over about 45mins, end result, not bad at all

What sort of sawdust RC. You'd need to be careful what you used, anything suitable for a smoker should be ok I would think.

Wouldn't this have eucalyptus oil in it? Eucalyptus oil is toxic.

equipment: Eve - 4" x 4 plate solid state bubbler (sieve plates), 330 mm packed section on a keg boiler with 2 x 2000 W elements.
Currently having a makeover: 2" x 4 plate solid state bubbler (1" bubble caps, no sight glasses...maybe not for much longer!) on a bain-marie boiler.

The charcoal wouldn't have any eucalyptus oil left in it.

Don't think I would recommend toasted red gum sawdust. The temperatures required to remove the unwanted toxins would not be achieved . Can see a case of the green Apple splatters on the cards here :puke-huge:

Well if you're going to char a timber that has toxins so the toxins can be removed, charring the sawdust would be your best bet because of the high surface area.
