So I have both Oaks from the same source, both med toast. started a comparison test tonight, 2 x 1.5L Single Malt @ 65% after 3 hours the French has a nice golden hue and the American is still white. Has anyone else had this happen?

Yes american is always slower to colour and flavour. French is more caramel while american is more honey flavour.
