Even the distilleries I have visited,have no exact length of time for the oak matureration,seasonal variation,slight differences in batch'es ,different lots of barrells ,mean that you will allways need to test a little befor due date to get consistent results ,in the sheds they use to mature in,the barrells are moved around as the ones near the ceiling mature at a different rate to the ones closest to the floor,and once maturation is complete the amount left in each barrel will vary as well and ABV,a full barrell at the start may lose up to a third of its volume by the time its done,with the ABV matureration in a warmer climate will be different to the same product in a colder climate (with one ya lose more water and the other ya lose more alcohol) flagons got me by for a fair while ,the only thing I did was replace the metal caps with new plastic one's from the brew store .cheers hillzabilly :handgestures-thumbupleft:
