Banana liqueur - winner!

Wow. I added two bananas cut up to two tablespoons of pure maple syrup and a 1/4 cup of sugar syrup with a splash of vanilla extract.

Threw it all into 750ml of 45% neutral.

48 hours later it looked awful - black brownish mush.

I strained it, added another two bananas and waited 24hrs and I've just finished straining it.

It's freaking awesome! So glad I ignored the idiot from Pouryourpoison.com who said it wouldn't work. This stuff is angel juice!

Awesome mate!, have been wanting to do one but most recipes say 2 weeks or more to steep, gunna give this a go, thiamjp for sharing :handgestures-thumbupleft:

Googe I would not worry about leaving it that long. 48hrs, then a quick strain and top up with another 2 bananas and at most another 48hrs.

Any more I think is a waste on such a soft fruit. It's given all it's gunna give after 48hrs.

It's in the fridge now, the best review I read said let it sit after straining for at least a day...that's not gunna happen at our place :-)

But the taste is sublime.

4 bananas over 48 hours in two separate lots
Good splash of maple syrup
Quarter cup to half a cup of sugar syrup
Little bit of vanilla extract or essence
Shake the ever loving shit out of the jar 3 times a day

And you're good to go.

A mate has recently put down 200lts of Banana wash, we have ran one lot so far but he is yet to report on its taste...the fermenter puked three times and when it stop fermenting we had to scrap banana turds of the top to get to the wash...if the flavour is wanting I will point him this way. not to my tastes but when he spoke about doing it it was like watching Homer talk about food so we let him go ahead...

I have a couple bananananananas in 1L of 65% for a couple weeks - i'll put some maple syrup in like you mentioned and strain it/dilute it this weekend.

Equal parts sugar & water.

Take a cup of sugar, into saucepan, top up with cup of water - DO NOT STIR.

Bring to boil until Sugar dissolved, not stirring at all, and then wait for it to call. Boom! Sugar syrup.

That will be choice.

But yeah get those manky nanas out, add some sugar syrup and vanilla when you throw in the maple and u got yourself a party

Mate you wait to filter it after a few days, chill it for a few hours and season it up with maple & vanilla!

I do a quick por through a fine mesh strainer, then I push hard to milk the liquor our of the bananas.

Then I get a clean tea towel and pour the liquor thorough and tip the spent bananas on it and wring out the tea towel and chill.

It's pretty clear by then but you could filter it again through a coffee filter.
