A quick update for generation 3.
Both fermenters are holding at 1005.
Looks like Tuesday I'll have time to put through for another stripping run.

On Sunday I started my second ever beer mash, since the first attempt seemed to have worked out. By Monday morning, the temp of the wort had dropped to about 26 deg. So I sprinkled the yeast on top, sealed it up and stored it in my still room.
This morning, the airlock is bubbling very nice. I was happy with an initial SG reading of 1050 for this beer.

The aroma from my beer fermentation in my small room this morning smells awesome.

Last night I transferred generation 3 of the whiskey into the boiler and added 1 cup of olive oil. Approx 55 litres I think in total.
Then I tossed about 5 litres of tap water back over the left over grain bed.
I also mashed the next batch of grain in the BrewZilla. Once it mashed out I turned it off and left it overnight with a lid on it.

Running the Still this morning. Started with 3500w of elements. Once boiler got to 80 deg I turned off the 2000w element and left 1500w of elements on. No puke at all.

Fore shots and first 2 litres of strip already done.

New generation of whiskey already transferred whilst the boiler was coming up to temperature. By the time I added sugar at the end, the yeast left over in the grain bed had already kicked off.
First time I haven't added yeast to a fermentor.

Well now, I've just shut off the power to the Still.

I've collected almost 10 litres of low wines in just under 6 hours. I stopped when the boiler hit 99 deg, and the parrot was also at 20% ABV.
Considering I stuffed up fermantation no3 and had to fix it with a sugar safety net, I'm very happy and excited by the result of today's play in the garage.

Meanwhile fermantation no4 is really starting to bubble very nicely.
I expect it will be 2 1/2 weeks before ill have a chance to run it. No point in rushing now that it seems to be working.

Just got home from a dinner out, and checked the fermenters. The Airlock on the Whiskey gen#4 is going off really crazy hard - and I never added yeast. :handgestures-thumbupleft:

Pretty happy that for once I haven't killed the yeast bed, finally getting something correct. :laughing-rolling:

Thanks Wellsy, it does feel good when things start to work by plan, instead of by accident. (especially after fixing my mistake).

Last night i took the lid of the 4th generation whiskey - and dropped a hydrometer in. It settled at 995 - so it looks like its ready to be run on this weekend, before the heat hits Victoria on Sunday.

I also dropped the hydrometer into the beer fermentation and it settled at a neat 1000 - i'll also get to bottle that on the weekend. Hopefully bottle that on Friday night, and then run the whiskey on Saturday morning.

Are you putting sugar in the bottles or bulk priming?

First batch i bottled i put a tiny bit of sugar in each bottle - the bottles are 500ml bottles.
I'll probably do the same again for this second batch.

You can buy a nifty little 3 dose sugar scoop, that has the right amount for a 500ml bottle. I got lazy when I was last doing homebrew and would use the coopers carbonation drops. If I were to start up again now, I reckon I'd be looking at kegeration.

Update for Fermentation No.4.

I ran the Fermentation on Saturday morning. Transferring to the boiler by using a 2 litre SS jug.

I tip the jug into a rice strainer, which is on top of a 10 litre fermenter that has a brew in the bag (bag) to help filter out anything that passes through the rice strainer.
The 10 litre fermenter has a tap which then drains the liquid only into the boiler.
This process takes me approx 1/2 hour to get 50 litres into my boiler. :angry-banghead:

I turned the boiler on at 6:30am and all finished and turning it off at 12 noon.
During that time i collected 250ml of fore shots (promptly threw out as weed killer) and then proceeded with 7.5 litres of stripping run starting at 91% abv and kept going until it was 20% abv at the parrot. :handgestures-thumbupleft:

Whilst i was running the stil - i also boiled water in the Fermzilla and mashed the last of the smoked malt grain that I had left.
As i had left about 10 litres in the bottom of the fermenter - which i also added 10 litre of cold water to keep the yeasties alive - late afternoon i was able to slowly add the mashed grain and wort back into the fermenter - and kept the overall temp below 35 degrees. Topped up to 60 litres by alternating the mash/wort and cold water alternately.

Sunday morning - the air lock was going off nicely - so that means i've kept the yeasties alive for a third fermentation. :handgestures-thumbupleft:

Morning all.

I did a SG reading last night on Fermentation no5 - it is already down to approx 1012.
Starting SG was approx 1055.

I am hopeful that this fermentation will be ready for a Friday valentines day stripping run ... that means I can do the slow spirit run of all 5 generations on Saturday 15th. :happy-partydance:

Did the 5th generation run this morning for about 5 litres. Stopped when parrot was about 20% ABV.

Emptied and cleaned the boiler early afternoon.
Then filled with all the stripping runs for a total of 37 litres at 55 % ABV.
Topped up the boiler to 55 litres and it seems to be exactly 40% ABV.

That is all set up for turning on very early tomorrow morning for a slow steady spirit run.

The aroma is amazing. I'm getting high on fumes.

Can't wait to see and taste the finished results.
